This simple risotto is very easy to make because you do not have to stand over it stirring constantly as it cooks, and it is just as delicious.
How to make Oven-baked porcini risotto
SERVES 4
Ingredients
25g dried porcini mushrooms, soaked in boiling water for 30 minutes30 ml garlic infused olive oil
1 onion finely chopped
225g risotto rice
Salt and Black pepper
Procedure
STEP 1
Drain the mushroom through the strainer and reserve the soaking liquid also. clean the mushroom properly and dry it on kitchen paper.
STEP 2
Take a roasting pan and heat the oil and add the finely chopped onion. and cook it for 2-3 minutes.
STEP 3
Add the rice and stir it for 1-2minutes. Add the mushroom and pour in the mushroom liquid and mix it properly. Season it and cover it with foil.
STEP 4
Bake it for 30minutes in a preheated oven at 180degree C . Stir it occasionally, until all the liquid has been absorbed and the rice is tender. Serve them hot in serving bowls.
