Chilli chicken is a popular Indo-Chinese dish of chicken. In India, this may include a variety of dry chicken preparations. Though mainly boneless chicken is used in this dish, some people also use bone-in chicken too.
Chilli Chicken is made of chunks of boneless chicken mixed with dry red chilies, finely chopped ginger and garlic, onions, and other Indo-Chinese spices to make a spicy Indian flare dish along with the distinct traditional Chinese flavors.

How to make chilli chicken
Ingredients
Chicken 500 grams
Eggs 2
Cornstarch 6 tbsp
Salt to taste
Soy sauce 2 tbsp
Chilli sauce 2 tbsp
Onion 2 medium size
Garlic 10 cloves
Green chilies 4 slits diagonally
Capsicum 2 medium size
Oil 3 tbsp + for frying
White pepper powder 1/2 tsp
Chicken stock 3 cups
Vinegar 2 tbsp
Procedure to make chilli chicken
1. Wash the chicken properly and cut them into dice size. Mix egg, 4 tbsp of cornstarch, salt, and 1 tbsp soy sauce, and mix it well. Let it rest for half an hour.
2. Peel and wash onion and cut it 1/4 and separate the petals of the onion. Wash capsicum and cut it to the same size as an onion. Peel garlic and finely chop it.
3. Heat oil in a wok for deep frying the marinated chicken. Fry it till it's golden brown. Remove and drain its oil.
4. Heat 3 tbsp of oil in a wok, add chopped garlic and stir fry it. Add onion, capsicum, and green chili. Stir fry it for a minute.
5. Add chili sauce, soy sauce, white pepper powder, salt to taste, and chicken stock. Bring it to a boil and add the cornstarch slurry.
6. Boil it till the sauce starts to thicken. Add Fried chicken pieces and vinegar. Toss it continuously for a minute and serve it hot.
