Kadai Paneer

Ingredients:

2 cups diced paneer (cottage cheese)
2 medium-sized onions, finely chopped
2 medium-sized tomatoes, finely chopped
2 capsicum's, diced
2 cloves of garlic, minced
1 inch ginger, minced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala powder
1/2 teaspoon red chili powder
Salt, to taste
2 tablespoons oil
Fresh coriander leaves, for garnishing

Instructions:

  1. Heat the oil in a large pan or kadhai over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions, minced garlic and ginger and sauté until the onions are golden brown.
  4. Add the chopped tomatoes and cook until they are soft and mushy.
  5. Add the diced Capsicum's and cook for a minute or two.
  6. Add the coriander powder, garam masala powder, red chili powder and salt to taste. Stir well.
  7. Add the diced paneer to the pan and cook for a few minutes until it is lightly browned.
  8. Serve hot, garnished with fresh coriander leaves.
