Broccoli soup with Garlic toast

This recipe originates from Rome. For the best color, use the freshest broccoli you can find and good-quality parmesan cheese.

How to make Broccoli Soup with Garlic toast

 SERVES 6

Ingredients

700-gram broccoli

1.75 ltrs veg stock

Salt and Black pepper

30 ml fresh lemon juice

Grated parmesan cheese for garnish

FOR  THE GARLIC TOAST

6 slices white bread

1 large garlic clove

Procedure

STEP 1

Using the small knife peel the broccoli stems. the peel comes off very easily. chop the broccoli into small chunks.

STEP 2

Bring the stock to boil in a saucepan. Add the chopped broccoli and simmer for 20 minutes.

STEP 3

Puree 2/3rd of the soup in a blender and then mix it into the rest of the soup. season with salt, pepper, and lemon juice.

STEP 4

Toast the bread, rub it with garlic, and cut it into quarters. place 4 pieces of toast in every soup bowl. Reheat the soup. and serve it immediately, garnish it with grated parmesan cheese.
