Fiorentina Pizza

Fiorentina Pizza 

 An egg adds the finishing touch to this spinach and red onion topped pizza. However, as it is at its best when the yolk is still slightly soft. 

Ingredients (SERVES  2-3)

250-gram homemade pizza dough
45ml olive oil
1 small  onion
175g spinach leaves
Freshly grated nutmeg
150g mozzarella cheese
2 egg
25 g gruyere cheese grated

STEP 1

Heat 15ml of oil and fry the onion until soft. Add the spinach and fry until cooked. Drain excess liquid.

STEP 2

Roll the pizza dough to the size of around 10 inches. Brush the pizza base with olive oil. Now spread the pizza sauce from the back of the spoon.

STEP 3 

Top with the spinach mixture. sprinkle over a pinch of grated nutmeg. Spread the grated mozzarella. drizzle over the remaining olive oil. Bake it for 10 minutes in a preheated oven at   220 degrees C . Then remove it from the oven.

STEP 4 

Make a small well in the center of the pizza topping and carefully break the egg into the well.

STEP 5

sprinkle over the grated gruyere cheese and return to the oven for further 10 minutes. Remember this process should be quick. Serve immediately.
