Fresh Tomato Soup

Intensely flavored sun-ripened tomatoes need little embellishment in this fresh-tasting dish. on a hot day, this Italian favorite is just as well served chilled.

How to make Fresh Tomato Soup


SERVES 6

Ingredients

  • 1.3 kg  Ripe tomatoes
  • 400ml vegetable stock
  • 3 tbsp tomato paste
  • 30 ml balsamic vinegar
  • 2 tsp sugar
  • 10 leaves  of basil, a few for garnish
  • salt and black pepper
  • Toasted cheese croutons.

Procedure

STEP 1

Blanch tomatoes for 30 seconds in boiling water, then refresh in ice-cold water. Peel away the skin of tomatoes and cut them roughly. Put them in a saucepan and add the veg stock. Bring it to a boil, reduce the heat, cover it and let it simmer for 10 mins until the tomatoes are pulpy.

STEP 2

Add tomato paste, balsamic vinegar, sugar, and basil. Season it with salt and black pepper, then cook gently, stirring for 2 min. Process the soup in a blender, and then return to the pan and reheat gently.

STEP 3

Serve in bowls, topped with toasted cheese croutons, garnish it with basil leaves.
