An easy step-by-step red sauce pasta recipe will help you make an authentic cafe-style dish. This pasta is traditionally called 'Arrabbiata pasta' and is referred to as red sauce pasta because of the red color of the Arrabbiata sauce, which is prepared using dried chili peppers, tomatoes, garlic, and olive oil.
How to make tomato sauce pasta

for boiling pasta
- 5 cup water
- 1 tsp salt
- 2 cup pasta
for tomato puree:
- water (for boiling)
- 5 tomato
- 2 dried red chili (optional)
for red sauce pasta:
- 2 tbsp olive oil
- 2 clove garlic (finely chopped)
- 1 onion (finely chopped)
- 1 tsp chili flakes
- 1 tsp mixed herbs
- ¼ tsp pepper powder
- ½ tsp salt
- a pinch of sugar
- 30grms parmesan cheese
INSTRUCTIONS
Boiling pasta:
- firstly, in a saucepan boil 6 cups water and 1 tsp salt.
- once the water comes to a boil, add 2 cups pasta, boil for 7 minutes, or until the pasta is cooked al-dente.
- drain off the pasta and add some oil and mix it so that the pasta doesn't stick.
Pasta sauce preparation:
- In a large vessel with boiling water add 5 tomatoes, 2 dried red chilies, and boil for 5 minutes. Drain off and peel the skin of tomatoes. Blend to smooth paste, keep aside.
- Take a pan, add 2 tbsp olive oil and garlic, onion, and saute well. Further add chili flakes, mixed herbs, pepper powder, and salt.
- now add prepared tomato puree mix well, cook for 2 minutes or until tomato puree is cooked completely. Add a pinch of sugar to reduce the sourness of Tomatoes.
- Add some pasta water, bring it to a boil. Now add grated parmesan cheese to your sauce. Now add in boiled pasta and mix well.
