2 Types of Thai Curry paste

 There are three main types of Thai curries—red, yellow, and green—which are categorized by the color of the curry paste. They all share some common ingredients, but the addition of different types of chilies, spices, and herbs add to the overall color and flavor. 

But in this article, I am going to tell you the recipes of the two most famous curry paste, Red and Green curry paste. 

Green curry paste


Ingredients


10-12 Green chillies

6-8 cloves Garlic

1 Medium onion

25mm piece of ginger

60-gram coriander

The rind of 1 lemon

1tbsp coriander seeds

1 tbsp cumin seeds

2 stalks of lemongrass

1 tsp salt

1/2 tsp white pepper powder


Procedure


1. Take all the ingredients in a food processor and add a very little quantity of water so that curry paste could grind properly and become a thick paste.


2. You can store it in a refrigerator or if you want to store Curry paste for a longer period of time you can freeze it.

Green chillies




Red curry paste


Ingredients


10-12 dried red chillies

1 medium onion

4-6 cloves garlic

25 mm piece of ginger

2 stalks of lemongrass

8-10 stalks coriander

1tbsp coriander seeds

2 tbsp cumin seeds

1/2 tsp white pepper powder

1/2 tsp salt


Procedure


1. Soak dried red chillies in warm water for 10-15 mins and drain them.


2. Take all the ingredients in a food processor and add a very little quantity of water so that a thick paste is formed.


3. Same as green curry paste you can store it in a refrigerator or freeze it.




To get the bright red color of the Red curry paste you can use Kashmiri red chillies.
