Vegetable Manchow soup

 Vegetable Manchow Soup is one of the most popular soup recipes from the Chinese Cuisine. Finely chopped seasonal vegetables are simmered in a wholesome vegetable broth, seasoned with Asian sauces and spices to make this soup.

How to make veg. Manchow soup

Ingredients

1pcs  Shitake mushroom(Dried) 
1pcs  Mushroom
1/4 small Cabbage
1/2 medium Capsicum
2  green chilli
1 small carrot
10 gram Ginger
2-3 cloves Garlic
1  Spring onion
1 cup fried noodles
2tbsp oil
3tbsp cornstarch
1/2 tbsp red chilli sauce
1tbsp soy sauce
1/2tsp white pepper powder
salt to taste
2-3 cup veg. stock
1tbsp vinegar

Procedure

STEP 1

Soak Shitake mushroom for 10 min in warm water. Drain and wash it properly and chop it finely.
Also finely chop mushrooms, Cabbage, Capsicum, Carrot, green chilli, ginger, and garlic.
Chop spring onion and keep the green part separately for garnish.

STEP 2

Heat 2 tablespoons of oil in a wok, add ginger, garlic, and green chilli and stir it. Add chopped spring onion and cook for few minutes.

STEP 3

Now add chopped shitake mushroom, mushrooms, cabbage,  capsicum, and carrot and cook them on medium heat, keep tossing it continuously for few minutes.

STEP 4

Add chilli sauce, soy sauce, white pepper powder, and salt, Mix it well. Now add veg. stock and bring it to boil, now simmer it for few minutes.

STEP 5

Make a slurry of cornstarch and add it to the soup. Cook it for few minutes till the soup gets thick, keep stirring it continuously otherwise there will be a lump of cornstarch. Add vinegar 

STEP 6   

Serve it piping hot with the garnish of crispy fried noodles and spring onion greens.
