Exotic Vegetable Au Gratin

 Vegetable au gratin is a traditional continental delicacy served with warm and crispbreads. Indian style veg au gratin features all your favorite veggies drowned in white sauce, topped generously with cheese, and baked till the cheese melts.

What is an au gratin dish?

DESIGNATING a dish as au gratin means that it is supposed to have a crusty top, usually consisting of a sauce of cheese and eggs and sometimes bread crumbs. In these dishes, such as potatoes or broccoli au gratin, the crust is the prize.

Derived from the French verb grainer — to broil — gratin is a process that involves topping a dish with either cheese or buttery breadcrumbs and baking or broiling until crispy.

Served 4-5

Ingredients


100 grams fresh baby corn- sliced lengthways

10-12 fresh mushrooms

1 medium carrot

1 piece of both red and yellow bell pepper

1 large onion sliced

50 grams grated cheese

 

Herb white sauce


2tbsp butter

2 tbsp flour

3 cups milk

Salt to taste

1/2 tsp black pepper

1/4 tsp paprika

2 tbsp  chopped parsley

1/4 tsp grated nutmeg

 

Procedure to make Exotic vegetables Au gratin


NOTE:- In this recipe, I have not used broccoli, If you want you can add it.

 

1. Firstly peel carrot and de-seed the bell pepper. Cut carrot, bell pepper, mushroom into cubes.

2. Boil water in a saucepan and add carrot, mushroom, and baby corn to boiling water for 2 minutes. Drain all the vegetables.

3. Take a nonstick pan and melt 2 tbsp butter and add the sliced onion to it and saute it till it turns brown.

4. Now add carrot, mushroom, bell pepper, baby corn and saute it properly, mix it properly. Remove it from the pan when you see brown marks on vegetables.

5. To prepare herb white sauce, melt 2 tbsp of butter in the same pan at low flame, add 2 tbsp of flour and mix it properly so that lumps are not formed, cook it for a minute it should not turn brown.

6. Now start adding milk gradually and keep stirring, boil it, simmer for 2 minutes.

7. Add salt, pepper, nutmeg, and paprika, remove it from the heat and add chopped parsley to it.

8. Take an oven-proof dish, spread 1/4 of white sauce at the bottom, spread all the vegetable mixture.

9. Cover all the veg. With the remaining white sauce, now sprinkle the grated cheese on top of it.

10. Bake it at 220` C for 15 minutes or till it turns golden brown. Serve it hot.
