Hot & Sour Soup

 "Hot and sour soup" is a Chinese soup claimed variously by the regional cuisines of Beijing and Sichuan as a regional dish. The Chinese hot and sour soup is usually meat-based, and often contains ingredients such as day lily buds, wood ear fungus, bamboo shoots, and tofu, in a broth.

 In India, this soup is made with red and green chilies, ginger, carrots, snow peas, tofu, soy sauce, rice vinegar, and a pinch of sugar. It is viewed in India as being a Chinese soup.

In this blog, I am going to tell you how to make restaurant-style Hot & Sour soup at your home.

 


How to make Hot & Sour Soup

Ingredients

Shitake mushroom   -  1 piece

Button mushroom   -   2 piece

Carrot                -   1/2 small size

Lemongrass          -   2 stalk

Garlic                -    4 cloves

Ginger              -    1 inch, cut into thin strips

Green chili -    3, slit into half

Baby corn        -    4 pieces, cut into small cubes

Lemon juice       -    1 tbsp

Salt to taste

White pepper powder-  1/2 tsp

Soy sauce            - 1 tsp

Corn starch        - 1 tbsp, for thickening

For Garnish

Spring onion finely cut

Coriander chopped

 

Procedure to make Hot & Sour Soup

1. Wash both mushrooms and carrot properly, peel the carrot, and cut them into small dice.

2. Till then take 5 cups of water in a saucepan, keep it on heat and add lemongrass, coriander stalks, garlic, and ginger, cover it and let it simmer for 15 minutes.

3. When you start getting the aroma, strain it and discard the ginger, garlic, lemongrass, and coriander stalks.

4. Add the green chilies, mushroom, carrot, baby corn, salt, soy sauce, and white pepper powder, cover it, and simmer it for another 15 minutes.

5. Make a slurry of cornstarch and add when the soup is boiling and stir it properly.

6. At the end add lemon juice just before serving.

7. Pour the soup into a soup bowl and garnish it with coriander and spring onion.
