Chop suey is widely believed to have been invented in the U.S. by Chinese Americans, but anthropologist E. N. Anderson, a scholar of Chinese food, traces the dish to tsap seui, common in Taishan, the home of many early Chinese immigrants to the United States.
Chop Suey is also rich in magnesium, which helps regulate the heartbeat and muscles in functioning. This makes it a good meal for those who might have a heart condition. This is because it has lower sodium levels.

How to make Veg American Chopsuey.
Ingredients
Noodles - 300 gms
Oil - 4 Tbsps+ for deep fry
Onion - 1 medium size
Carrot - 1 small size
French beans - 5-6 pieces
Cabbage - 1/4
Capsicum - 1
Ginger - 1 inch piece
Garlic - 4-5 cloves
Cornstarch - 2 Tbsps
Tomato sauce - 1/2 cup
Soy sauce - 1/2 tbsp
White pepper powder -1/2 tsp
Salt - to taste
Veg stock - 2 cups
Vinegar - 1 Tbsp
Procedure To Make Veg. American Chopsuey
1. Boil Noodles until they are 80% cooked, drain and let them cool.
2. Heat sufficient oil in a wok and deep fry the noodles until golden brown. Remove and drain the oil.
3. Peel and wash onion and carrot and cut it into julienne. Wash French beans, cabbage, capsicum and cut them into julienne. Finely chop Ginger and Garlic.
4. Heat 4 tbsps oil in a wok and add chopped ginger and garlic and stir it. Add sliced onion and julienne-cut carrot, french beans, cabbage, capsicum, and toss it in a wok for a minute.
5. Add tomato sauce, soy sauce, white pepper powder, and salt according to taste. Stir in the vegetable stock and let it boil.
6. Once it starts boiling, makes a slurry of cornstarch, adds it while stirring it, and cook it till the sauce thickens.
7. Add the vinegar and stir it well.
8. Keep the Fried noodle on the serving plate and pour the sauce over it. Garnish it with spring onion. Serve it hot.
